Well then that's the kind I like. Mustard based is kind of gross. I can eat a Maurice's sandwich but the more I think about it it's just not that appealing. However the older I get I find BBQ more unappealing as a whole anyway. I much rather just have a grilled chicken sandwich or even brisket - which can be considered BBQ.

How can you leave out the dry rub Tennessee posters? Anyway, vinegar bbq is the best.

There are two different kinds of barbecue in NC.


EASTERN:
Whole hog with pepper and vinegar
With red slaw and hush puppies.

WESTERN:
Shoulder only with vinegar/tomato base
With regular white or yellow slaw and corn sticks.




However, if it’s barbecue from
Georgia
sC. (Best Q I’ve ever had was shulers in LATTA SC)
NC
Miss
Ark
Ala
Ten
Tex
Va

True story:

I took a job up in Baltimore for a little bit. While there the owners insisted on taking me out to eat, claiming the best food. Of course I'm thinking seafood, and wondering what kinds of crab to get when we end up wherever we end up.

It was a BBQ place. They ranted about how it had to be the BEST barbecue EVER. I just smiled and ate it. It was fine, but when they asked I just stared for a moment and said, "Well, I'm from the South, so..." and then tried to soften it by explaining that for every BBQ place here, there'd be 5-10 in the South.

Later learned they were from Canada and Vermont, so I definitely gave them a pass.

Also went to a different BBQ place up there, and they had "Carolina sauce" and "Alabama sauce" in bottles. I don't know what they thought "Alabama sauce" was supposed to be, but the watery stuff in those bottles was NOT it.

I do find it amusing how people will apply character traits universally to millions of people (all French people are rude, all Russians are drunk, all Millenials are hipsters), but will turn around and fight you VEHEMENTLY if you imply the wrong association of BBQ sauce to region.

It needs to come from here at a minimum.

No propane
Charcoal is not forbidden. But not preferred.
Needs to be wood smoked.

Best Tennessee BBQ I've had was a pulled pork sammich covered with cole slaw in Dyersburg, TN. Those folks do it right! No one beats west Tennessee when it come to BBQ!
