And yes, I will even eat Maurices in Columbia with mustard. If I was Alabama I would just eat the q with no white sauce. Just hope the man can smoke the meat right and that’s all I need.

Carolina vinegar bbq will always have a spot in my heart. The Bama white sauce is pretty damn good, too.

I just know that I have no desire to go to downtown Charleston for my BBQ. I'll just stick with the drive to country Hemingway where the people are more genuine and where I guarantee the BBQ is better than the new place in Charleston.

I only BBQ pork myself. I also do not like any of the sauces from any area. I like my ribs/pork butts done in a sweet and smokey kind of way. Lots of smoke and lots of brown sugar and apple juice/cider.

I will put some molasses KC style BBQ sauce on my ribs. Never on my pulled pork though.

And the best bun for a pulled pork sandwich are those Hawaiian sweet roll buns.



I do enjoy some good brisket, but I've never smoked one. Kind of pricey due to the size of the meats and most of it would go to waste. Gotta have some sauce on them though.

PS: I smoke with 100% wood and nothing else. Small hot fires with very little visible smoke. You should smell the smoke, not see it as a general rule. Not saying you can't make good food without doing that, but it won't be as good on the smokey flavor and is probably why so many people love the sauces.

And a good BBQ stand will turn your head with the smell.

A good BBQ place is smelled well before it's seen. If there is an old cinder block building with a tin-roof bellowing smoke with a stack of hickory wood behind it, my blinkers are on.

In Alabama, people have been killed arguing over football. In NC, it's barbecue.

This is actually why I am experimenting with smoking thinner pieces of meat.

I want a smoke ring to take up a third of the meat if possible. Then there is no need for any kind of sauce.




Mistakes have been made. I started off cooking with as much smoke as possible @225 • and had some disasters.......creosote they would numb your tongue.

Wife likes it on her chicken, never puts it on pork.

I don't like it on anything.
