I don't know. You smoke a brisket. And you smoke a Boston Butt. Then, you can choose to leave it dry, or you can add BBQ sauce. Or, just have BBQ sauce on the side. At the end of the day, it's all BBQ. With or without sauce.

Hate to break it to the Texas newbs but whole hog is the very definition of BBQ. I'm not sold on the sauce.

I'm in NC, but I like the SC mustard style a lot. I don't eat much bbq, but I do get a bit burned out on vinegar based every now and then.

I smoked up some pork (st louis style) ribs and chicken this last weekend. Tried new recipes. The ribs were pretty good, but I was disappointed with the chicken. I can't get firm skin on smoked chicken to save my life.

Seriously ... even the vinegar-based NC BBQ is way better than ANYTHING that SC has.


There is pretty much no good food in SC.

This is my issue too. The chicken skin turns out too rubbery. And this is after I leave it sitting uncovered overnight and try to dry the skin off before putting it on. I don't do whole chickens enough to really worry about it though.

Brisket, Ribs, and Butt are my go tos. If I do poultry I prefer turkey.

Yeah given the small area that actually uses Mustard based in SC, its weird thats all ppl know. Like even the crappy joints in columbia other than Maurices don't use mustard.

This is the widespread view of those from TX. Sure, brisket is good in TX but it's an almost unknown entity in the SE. It's a matter of preference based on where you live. I lived in Dallas for a few years and became fond of brisket there. Never really got into links.
Still though, in my honest opinion, pork is where it's at.

If ever in ATL, go to Fox Bros BBQ. Texas guys started this place and it's hand down the best BBQ in town. They do great brisket AND pork, bc you have to in the South.
