Yeah I know a few that had camps down there that have sold in the last 5-7yrs. A lot of changes and not for the better - marsh erosion, freshwater influx, lack of ducks, etc…

According to google they’ll eat everything but prefer marine mammals as they get older - dolphins and whales in Gulf

They also eat other sharks and rays - plenty in gulf

They will eat tuna - probably impossible speed wise for a large GW. Probably can pick one off when they are schooled up on bait balls.

I use baitcasting reels all the time for redfish throwing spoons, spinnerbaits, chatterbaits. Etc…. Your bass stuff should work fine for this

I use spinning rods/reels if fishing bait under a cork or on the bottom for reds. Standard 7ft medium power - fast action works well. 3000 size spinning reel. Spool with 30lb braid. Gear choice will depend on budget. Basic is fine for fishing bait.
