I recently was in the Pacific Northwest and at a restaurant out there I had ... just because it was so funky sounding I had to try it ... kielbasa and eggs. And when they said kielbasa and eggs, they meant it, huge link of kielbasa that was grilled and had the score marks on it. Incredible.

OK, serious question, not asked with snark so let's have none in return ... if someone was going to do a Texas brisket tour, which is one of the things on my own personal bucket list, what would be the five places you'd suggest?

Other Aggies or Longhorns, feel free to chime in.

The only Texas brisket place I'm really familiar with is Louie Mueller that Guy Fieri profiled years ago on Diners, Drive-Ins and Dives.

BBQ is a method of grilling, it's not a cut of meat and its definitely not a gdm sauce or baste...

Good bbq is smoked on wood with or w/o charcoal. That's it, whether you're in SC, TN, KC or TX.

Sauce on the side. Wet BBQ is junk. All that other shite is fluff....

This laughably false. And I'm a big fan of the Smoking Pig in Clemson. Great upstate pork BBQ there (as opposed to that bullshite you get down in Columbia).

But the brisket is nowhere close to what you get in a good BBQ jount in Texas.

Not even known for brisket?

Texas Monthly is a rag run by communists and communist sympathizers in the People's Republic of Austinistan.

It's pages aren't fit to mop up the juices of a perfectly smoked Texas brisket, let alone rate the quality.

Doesn't have to be if made correctly but it can be a little rich if too much or too little of certain ingredients are used. I understand lots of people that don't eat mayo don't care for it but I know some that don't like mayo eat the white BBQ sauce.

Alabama white sauce is fire when paired with BBQ chicken nachos. Or one of my favorite dishes is deluxe breakfast fries.

Basically you take your leftover BBQ. Put it over some fries (or hashbrowns) with smoked meat. Fries, smoked chicken, white sauce, cheese, jalapenos, and over easy egg. Dab of hot sauce if you wanna get frisky.

This ... being in Alabama, my favorite version is the one served at Miss Myra's near Birmingham (they were profiled on Andrew Zimmern's show). Can't really put a good description of it into words, though. I do think it has more vinegar than other versions I've tried, though.

I do not like Big Bob Gibson's version.
