I think KaiserSoze99 is right, it's obviously not rendered properly.
I love fatty cuts, like a ribeye, but on brisket if it's not done right it'll dry the meat while leaving the fat totally intact.
Doesn't really makes sense, but I've eaten it that way at random joints many times, unfortunately.

Just came to post this too. I normally take lunch around 11:15 because I'm not a big breakfast guy. Now I want to go to Maurice's since it's the closest thing to me. Guess I could hit up Palmetto Pig.
