Hugh, if you have the time learn to weld a little bit and build your own. Most of the Weld on the offset cooker are simple Welds and buddy it's a blast building your own. Of course I know times a factor there also but if you get a chance try it.

The white sauce is great with chicken, if not too thick.
If you use anything else, I prefer a dry rub to thick, sugary sauces

I'd love to try that! But I'm useless with welding and building in general. I might try anyway.

This ... fair to middlin' pork can be salvaged, at least to my palate, with sauce and fixins. Brisket is either good or bad, there is no in between, no margin for error.
But when it's done right, I'll take it over any pork on the planet. Flame away, I have a tough hide.

I've always made it with apple cider vinegar and go light on the honey and brown sugar. But, that's just my taste preference to get the tangy vinegar flavor to stand out and a thinner sauce.

Smoked pork butt is King....white sauce is ok on bbq chicken or on a salad but that's it.

I make my dip/sauce with vinegar, Worcester, little red hot, brown sugar, honey, beer, black pepper, cayenne pepper, butter. Bring it to a boil then let it cool. I use it on about any meat...even marinate my steaks in it
