Several members of my family are deathly, and I do mean deathly, allergic to mustard so I've never developed a taste for it.

In the battle of the foods... with Texas its Tex Mex. With South Carolina its great seafood. I got to give the nod to SC in that one.

If you mix it with sugary/smoky KC style BBQ sauce you get Chick-fil-a's "special sauce"....

I'm not sure what's in ATM's special sauce....

Brisket is one of the most hit-or-miss meats IMO.

Done right, it's divine.

But too many times it's cut fatty and overcooked to the point of drying out.

You can call brisket darlin for all I care, it’s better than whatever trash you boys are smokin.

I’m down for a good mustard based bbq sauce. If you’re in Houston, try Luling City Market. Not as good as the one in Luling but solid bbq with a good mustard based option. If you want to try the best brisket in the area then Killen’s in Pearland is your best bet.

You have been eating poorly prepared brisket.

The only fat that should be removed is the hard tallow. The other fat should be left on and rendered over several hours.

The brisket that stays in the "stall" for several hours is the best you will ever eat. (the "stall" is where the internal temp stops rising at between 150 and 175). When it hits 203 after several hours, it's butter.

If brisket ain't BBQ, the frick BBQ. I hate it.
