I cook my briskets on a Kamado Joe Classic 3 at 250..

Hit 205 and wrap it in a towel in a cooler for a hour

Lone Star Grillz makes great offset cookers.

Then you have Pitts and Spitts grills.

Here's a man who knows the frick of which he does.***

Makes me wonder if you've ever had good beef ribs.

Of course. Used to make them all the time. Absolutely delicious.

But more delicious? Brisket.

if you need sauce for it to be great BBQ it isn't great BBQ

This is a perfect description of great barbacue. Sauce can make it better but if it needs sauce it's not good.

Austin Hill Country area
Black’s
Kreutz
Smitty’s
Salt Lick BBQ

HTX:
Pinkerton’s (may be the best)
Luling City Mkt (longest standing in this group, also next to a Turducken place—Hebert’s—so get you a two-fer)
Gatling’s (started by a Rice U. fb player who was also a 3x major)
Truth (it’s good, but way overpriced)
Killen’s

Dallas
Trash, unfort. outside of Lockhart BBQ
Hit up Bubba’s Cook’s Country for fried chicken instead

This is a fantastic list, maybe you Georgia boys are alright.
