Overrated requires highly rated.
Based on college contributions, i would go with Matt Stafford. What he accomplished as an 18, 19, and 20 year old is pretty amazing.
But as far as 3 year starters go, his teams were led by the defense and running game. The only time that i think we relied on him for an entire game to win was his last game (michigan state bowl game). 99% of his other wins had a dominant running game providing him cover.

1.3 TDs per game
.84 INT per game
57% completion percentage

Rushing stats over those 3 years
150.9 yards/game
4.32 y/a
1.89 rushing TD/game

Coker was a DOG. Dude took straight hit after hit and threw bombs. Probably the most underrated QB for Bama as far as title winners gos.

For Georgia I have to say Jacob Eason.
His freshman season was very meh. UGA fans were treating him like Jesus Christ. During his recruitment, there was a large UGA fan contingent that didn't want Richt fired for the sole reason that Eason might decommit. Think about that- a fanbase making coaching decisions based on the potential consequences of a single recruit. Eason was worshipped. And at Wash, he was ok but not godly. And what's he done in the NFL so far?
And the Fromm haters are dumb with the game manager stuff. Fromm made plays. He was a playmaker. When Fromm had a good game, we won. When Fromm had a bad game, we lost. That means he's more than just a game manager. His junior season wasn't great, he was dumb to leave early, especially with Fields already in the portal.

Mitch Mustain is at the top for Arkansas fans.
I seem to remember some hype for Ricky Town when he transferred here. Never saw the field that I can remember either.

We've never really had over rated QB's, only under rated ones. Our problem was, is and probably always will be the hiring of over rated coaches.

Mitch actually won games for us as QB. He was something like 7-0 as a starter.
My pick is Gary Brashears for Arkansas. He was ranked as one of the top QBs in his class and I don't know that he ever played a snap for us.

Shea Patterson is the only answer for Ole Miss. in the last thirty years at least. Our rare 4/5 star QBs typically perform well.
