Ole Miss likely doesn't have anything to hide in this situation. Certainly other situations, but not this one. What would discovery show from the Ole Miss side, that they signed these kids to a contract? And then they left?
It's not like any lawsuit can just become a discovery fishing expedition for other issues.

Sure. I'm guessing that Ole Miss legally signed them to a contract and didn't do anything illegal in that process such as coercion or duress.
Just like I'm guessing that LSU absolutely wants no part of how they were recruited to LSU after signing those contacts with Ole Miss bring on a court record for the NCAA to see

Why would the player's recruitment to LSU even matter? The agreement is between the player and Ole Miss. Anything related to their recruitment isn't pertinent to the actual issue.

Not really. The player is still responsible in this instance. The player would have to sue LSU to get to any of that.
If my company agreed to reimburse me for my move and I retained a moving company and then didn't pay them, their lawyers aren't going after my company. They're going after me.
The only instance where that might come into play would be if the player claimed some type of hardship or something.

They'd sue both you can your company and essentially say one of them owes me. You and your company would then flight about who actually owes. Happens all the time.

Oh and they end up paying anyway plus a multiplier and attorney’s fees for wasting everyone’s time.

In what world should LSU be allowed to ignore the contractual agreements of players who had already signed with other schools? Why should Ole Miss be fiduciarily irresponsible to not collect from a school that eagerily conspired with our former sociopath of a coach in an attempt to burn Ole Miss and Oxford to the ground last December.
It's not OM fault that LSU owes tens of millions of dollars to their former coaches.
