Perkins. If he had stayed he probably would have ended up winning pretty big at Bama. He just wasn't the Bear, and he got tired of being reminded of that.
...and for those who say, "The same thing will happen when Saban leaves!!!1!1" I will have to disagree. Yes, Bama fans will be spoiled, but when haven't we been? The difference between Saban and Bryant is that, while both won in a big way, Bryant had a cult of personality around him, while Saban does not. Bryant was (at the time) the greatest college football coach of all time but even more than that he was larger than life. Saban is just the greatest college football coach of all time.
Case in point: One of the biggest furors in Perkins' tenure had nothing to do with wins or losses. It was when he decided to take down the tower from which Bryant used to watch practices. The guy who follows Saban will just have to deal with not winning as much as Saban. Perkins had to deal with the fact that he was not literally the same person as Bryant.

Croom if for no reason other than 2007 was a breath of fresh air in a really terrible decade. Beating Auburn and Alabama in the same year seemed impossible at that point, but he did it. Also beat a good Kentucky team on the road and won a bowl game, I believe that game is still the Liberty Bowl attendance record.
Also had some memorable upsets here and there. Florida 2004 was unreal at the time. Winning in Tuscaloosa in 2006 was a lot of fun too.

I'll go with Coach O. The guy came in and brought in a ridiculous amount of talent. He wasn't able to get a quality QB until after he left (he recruited Snead, but Snead had to take a redshirt during O's last year). Nobody could question his work ethic and his tireless recruiting. Matt Luke ended up quitting and running off to TN and then to Duke because he said that O demanded too much time/effort.
Nutt inherited a deep roster, thanks to Coach O, but didn't recruit at all and after a couple seasons the cupboard was bare again.

Orgeron had an eye for talent. A while back a friend and I were fairly drunk and were talking about this and watched an old egg bowl game from the "O" era. A lot of guys all around the field that played in the NFL.

I'll say Mike Shula. He was hired under almost impossible circumstances - late in the year, probation, reduced talent, aging facilities. He wasn't a good coach and lacked the gravitas to maintain discipline. But he snuck in a 10-win season and recruited some high level talent (Andre Smith, Wallace Gilbert, Prothro). He did the best he was capable of. He just wasn't capable enough.

Our "best worst" has to be Chizik. Could recruit and coach defense. Got a title... also had 2012 season a couple of years later and completely lost the team. A weird turn of events.
