New Orleans hasn't ever been known for our BBQ, but the scene has picked up big in the last few years. Try Central City BBQ next time in town.

That looks better than any brisket I've ever seen outside of Texas? (Except what come off my egg...I'm ashamed I don't have a real offset smoker.)



(One complaint...doesn't look like it was cut properly.)

Not a good sign for Tx BBQ and Tx cuisine in general that a guy who won a James Beard award for his ability to cook bbq has the following steps for cooking said BBQ.

1)build a fire
2)buy a brisket
3)put salt and pepper all over that bitch
4)put brisket next to the fire for a long arse time
5)win award because literally everything else in the region tastes like dog arse.

Brisket novice here, but think those are the burnt ends. Not sure how they're supposed to be cut.

Well, I could be wrong. I've never quite understood how places do burnt ends. I do cut some burnt edges off, but not much, and they usually go in my beans.

Still, that brisket looks good. Moist, good bark, maybe not quite firm enough to pick up, though. Hard to tell.

But it's a hell of a lot better than anything I can get here in Arkansas.

Central City is pretty darn good. Blue Oak BBQ is better I think. I don't know why previous poster inserted NO into a S. Car vs TX bbq shite fight but Nola is really making huge strides in BBQ scene. 5 yrs ago we had 1 place putting out decent q (The Joint). Now there is no less than seven that put out real deal very good bbq.

you could be correct. There are 2 main parts of a brisket... one if you cook it long enough will dam near pull like a butt. The other is a little meatier and needs chopping that looks like the burnt ends tho.

So...clearly ... a lot of poor Midland folks think it IS SC BBQ.


Sorry that your BBQ sucks. If you'd ever been outside Richland County in your life and maybe gone to Texas, Memphis, KC, etc ... you'd realize this ... though, likely too stubborn to admit.

The way I do it is:

When it is time to pull the brisket. Cube the point (fatty side) into bite-size chunks (I usually do part, not all) then hit it with some sauce and it goes back on the fire just enough to get tacky.

It is pretty hard to say KC is not the best. Everything gets the BBQ treatment in KC. Not only is it all variety of meat there are several types of BBQ in KC. All other areas seem like niche plays on BBQ. Not to say that Texas or South Carolina (or others) doesn't have good BBQ, it is just they have their small thing they do well when we have all the things.

Mustard based bbq sauce is good. Vinegar based bbq sauce is better.
All the rest are ketchup with smoke flavor added.

Had Little Pigs on the way through Columbia one time. Very nice que if you ask me, plus Buffet style.
