People who have never had smoked beef done right just don’t understand what they’re talking about. I like in Arkansas now, and I had to learn to do it myself, because the brisket around here in the restaurants sucks arse. I got Franklin’s book, and have greatly enjoyed learning how to do it.

Sliced white bread is pretty damn good with brisket and sausage. It’s pretty standard in Texas places. Skip the bread if you want. I like it together.

Smoked meats shouldn’t need sauce to be good, but it’s alright as an extra.

It’s your style of que mixed with potatoes. Looks like shitty chili. I’m sure it tastes fine, but I’d rather have my bbq taste like smoked meat. Not in a paste form.
