I love my sausage and brisket stuck on a piece of white bread. It’s not necessary, but I like it anyway.

I'm just being difficult.

But in the end, pork is the king of bbq. It is the original. It is as deep to the roots as you can get to American bbq.

Brisket is good. Sausage is good. But they aren't the king.

For some reason, Texans are incredibly insecure about their bbq. It is either their way or the highway.

Pork is fine. It’s very forgiving. Even when it’s bad, it’s good.

Sausage is cool for its variety. I like it, but know very little about it.

Brisket is king. It’s amazing when done right, shite when done wrong.

Beef ribs are straight from heaven when done right. My favorite, but pricey.

What you think is insecurity is actually the frustration of knowing something so many others can’t understand. You think you’ve had good brisket, but you probably haven’t. Texas BBQ (when done right) really is just better.

Part of the reason pork is king is you have to really try to mess it up. Pork is by far the easiest to cook and most forgiving.

Brisket is hard to get right. I have had some really good brisket, but half the places that serve it dry it out.

It can't be king if so many places inside and outside of Texas can't even do it right.

That’s part of the reason why it’s king. Anybody and their dog can do decent pork. Only a real pit master can do brisket...but when they do, it’s like a religious experience.

The only meat plants in SC are chicken plants so they tend to get disillusioned. They do have pork in NC but beef is far away so they don’t really understand
