People who argue that Oklahoma is not culturally southern have not eaten in Oklahoma. With the exception of jambalaya and gumbo (which are great no doubt) and substituting cornbread for rice with red beans and you have all of the staples for the cooking I grew up with.

People voting for Catfish over Gumbo first of all need to be banned, secondly need to be informed catfish can theoretically be added to gumbo. (Near the end of simmering, don't want it disintegrating)
Gumbo is the best southern stew in existence, nothing else in the same league if done right.

So true,
We had made biscuits and gravy with whole hog sausage patties yesterday morning for breakfast. Last night I went to the fridge and noticed the leftover gravy and heated it and the biscuits up and had them at 10PM last night.

Good fried catfish is hard to find and tough to beat.
I felt the same way with chicken and dumplings. I've only had it three other times where it was in the neighborhood of my grandmother's. But, when it's right, and that is homemade, it is incredible. Never liked a single serving at a restaurant or many others who try to cheat to speed up the process. I imagine that's similar to good gumbo.
