Chicken Mustard

Im sure as a fan of a Alabama school you probably won't understand this but only someone on the very bottom rungs of society would think a white mayo sauce should be used at a bbq

The worst thing to happen to bbq was the sweet Kansas city red sauce. Classic Memphis sauce is a tangy red but a lot of places started going to that sweet shite because of corporate confusion and America's diet of sugar overabundance because of fatasses.

You don’t get your own (or higher) ranking by being “basically Memphis”.

Western Kentucky barbecue is somewhat unique…but I don’t rank it because the sauce is small regional at best and of course…mutton.

Memphis is basically on the MS line. Might as well be shared style but Memphis is a hub. Mississippi doesnt have the well known places like Memphis but plenty of good bbq sprinkled throughout. This debate is always dumb because there’s not apples to apples comparison between the different regional styles.

I feel that way about BBQ sauce. There's no "right answer". It's all a matter of personal preference.

While I don’t praise Alabama barbecue, white mayonnaise is the base for just about every great sauce ever made. And in comparison, you all basically put yellow mustard on a pork chop. Might want to get off that high horse a bit.

Hey now, I enjoy white sauce on chicken, moreso on the fried hot chicken, but every sauce has it's place

Eh, I don't entirely agree there. Using a sauce doesn't change the actual principles of how the meat is cooked, like wrapping does. That part is unchanged, so my view is it is still bbq. Now, to your point though, needing to rely on a sauce to make your bbq is a different issue entirely and I think used as a crutch far too often. A good sauce can absolutely enhance an already good bbq, but should not be used to cover up laziness/incompetence.

This idea that people have that if you get barbecue in Alabama it is going to come with white sauce on it is ridiculous. White sauce is for chicken, and not every place has it anyway.

Alabama barbecue generally is top-notch. Being as we are in the center of the South you can find all styles here, all done well. Plus the greatest barbecue in the country is made here, in the smoker in my backyard. The rest of you are squabbling over second place.

I get all that..but Memphis has the basic style on lock down and gets all the glory. The regional variations, while all good, don’t necessarily get a seat at the table in these discussions.

Ding, ding ding! We have a winner folks. Wrapping "BBQ" destroys the best part of it, the bark. You work for hours to get bark and a smoke ring and you eliminate 1 of those 2 things by wrapping it up in butcher paper. Blasphemy.
