I think not having fans in the stands helps the best teams get through their schedule without an upset. That said, I think the season most definitely counts and does not deserve an asterisk. I'd also say you are just gonna be more prone to make mistakes with a loaded stadium, even at home. And mistakes are kind of like rolling the dice. They can be costly or not costly just depending on when and where they are made.
The NCAA field as a whole was down that year as many teams didn't play and some that did, didn't play much more than half a normal schedule. Bama played two extra conference games though and the rest of the season was normal in terms of scheduling.
That season counts. I still don't think it was as impressive as LSU's 2019.

A lot of players sat out that season and the other conferences on average didn’t play near as many games as the SEC.

So you’re saying 2019 LSU being listed as one of the greatest teams of all time has nothing to do with how many ranked teams they defeated? Or beating a Clemson team that had won 29 straight games and was the reigning national champ?
Or defeating (12-2) #4 Georgia by 27 points, #4 (12-1) Oklahoma by 35 points, and #2 Clemson by 17 points in the SEC championship, Semis, and national championship game , respectively. I mean those 3 games alone are more impressive objectively than the Tides entire 13 game schedule in 2020.
And you’re saying a team being judged on the caliber of teams they play and defeated has nothing to do with being named the GOAT? Lmao ok dude.

I am not saying it has nothing to do with it. But it is mainly based upon the eye test and the insane amount of talent they had on the field. People think they are great because of how they looked. They aren’t thinking about the number of ranked teams they played, margin of victory, or even who all they beat. They remember watching them and thinking “wow, this team looks like one of the best teams ever”. The NFL draft and NFL success - fair or unfair - also influences it. I typed “best college football teams of all time” into Google and this is what it spit out.

For the most part they don’t talk about resumes, they talk about the players they had. All those teams had a ridiculous amount of talent on the field.
If your argument was correct, that teams with better resumes are the better team, the Big 10 would not have won the national championship the past three seasons. Because some of those teams had much softer resumes than teams they beat.

The only people that I know who were butt hurt about that team was LSU fans. They thought no one would ever surpass their alleged GOAT team from the year before. All we did in a pandemic shortened season was play 13 straight Power Five teams, 11 different SEC teams and manhandled two legendary programs in the playoffs.
Did I mention we won every damn offensive award except for the TE award which deservedly went to Kyle Pitts. I’ll also say to this day DeVonta Smith is the greatest wide receiver in college football history. He wasn’t like Jamarr Chase who sat out the season for the draft.

That said... if your argument is resume based, then 2019 LSU and everyone else takes a backseat to 1945 Army.
Beat 4 top 10 teams, Won three straight against top 6 teams by a combined 141-13. Undefeated AND beat Germany and Japan.

2020 Bama and OSU combined for seven first round draft picks and 20 overall picks the following spring. (19/20 played in the championship.) Whether they played 6 games, 12 games, or whatever, beforehand, that’s a lot of talent on the field.

When people are evaluating “best teams” resume does matter, but it isn’t all that matters as you are arguing.
