I would chose Kansas City first and then Texas for BBQ. Don't care what you call it. Those would taste the best. Most BBQ in South Carolina kind of sucks. Mushy wet mess. And ketchup base > mustard base but dry rub w/ vinegar sauce on the side is actually the best for pork Q.

Mayo and vinegar based. Not my favorite.
For me personally, I like a ketchup based sauce, mustard sauce, or a dry rub. They’re all good when done well, and you can switch it up and have a bit of variety in your life. BBQ doesn’t have to be the same every time you have it.

If you ever come to Jacksonville, there is a place called The Pig that has a unique vinegar/mustard hybrid sauce, really the only way I can describe it. It is near perfect for pork.

Agreed. I love beef, but BBQ it ain't. Also, I've probably never had good brisket, but I don't see it ever topping pulled pork. Pork fat dissolves in the meat. Brisket fat is just big disgusting globs. I'll take a good steak over BBQ all day, but keep your damn brisket away from BBQ.

If it needs sauce, it isn’t done right IMO. And Memphis BBQ is overrated

Again that gets into whether the brisket is done right. When it's done right, the fat isn't globs, it's a defined layer that is integral to the taste/experience.
