Nah. I act white. Especially at places like Kroger, the local butcher shop, and such.

I wear pants and at my age they are pulled up to my chest.

I like all the BBQ types and styles. Carolins mustard based is probably my favorite.

Rightly prepared brisket is A+
A rightly Prepared steak is A+
Perfectly smoked Chicken with big bobs white sauce is A+ I believe wholeheartedly they are each un-improveable.

But pork and only pork is real barbecue, not because it’s better or worse but because it IS.

And the reason the hog is BBQ is because it’s proper prep method is whole. It’s the only animal you can cook in this fashion because of the uniform fat distribution and meat texture. The entire hog cooks together. Beef won’t nor will chicken. A Random cut off a smoked steer side will never compare to a ribeye. And a random sampling of chicken is inferior to the wing. Beef and chicken are better by the cut. Hog is best whole. Hog wins.
