That's my question. White sauce belongs on chicken. Period. People who even contemplate putting white sauce on pork ought to go buy some old-school syrup of ipecac, it's a quicker way to induce vomiting.

Texas chili doesn't have ground beef in it, it has cubed beef in it, it's more of a stew. I can handle beans in ground beef chili (my wife also adds a roll of pork sausage to her chili, try it, you might like it), although I prefer without, but putting kidney beans in a stew made with cubed beef just sounds nasty and vile.

I prefer beef (brisket and short ribs are my favorites). I smoked some pork spare ribs (prefer baby back) Sunday but it came a dangerous thunder/lightning storm about 5 hours into it and messed up the finish. They were OK but just didn't go long enough. On a side note, seems to me pork has gone down hill over the last year or so. I know China owns many of the larger pork producers but it just seems most pork I buy is fattier than it once was. Bacon is almost scraps.

Right. I think real chili is just beef cooked down in a stew of dried chilis. People started adding beans to make the beef go further (just my guess). turns out they're delicious in a chili too.

From the other side of the state, doesn't Brunswick Stew always have squirrel in it? I've never made it but had it a few times when I was kidnapped and made to work over there for a while.

There’s a lot of effeminate men in this thread. Anyone that thinks pork bbq is better than beef bbq is delusional. I love pork but beef has far more flavor. This is not debatable so don’t even try. We will all know you’re a soy boy.

Try Alabama white sauce with a well prepared sliced brisket on a Ciabatta roll. Slap ya mama good.

Any of you tried pork steak? I think it’s mainly a St. Louis area thing. Steaks sliced from a pork butt. I prefer pulled pork, but it’s good if done right.
