Doesn’t change the fact that beef bbq is wayyy better than pork. Anybody with 12 pack and basic knowledge can cook ribs or s butt. Beef bbq is elite.

Just here to say how annoying it is to hear yankees or folks on TV refer to any event with a grill and any sort of meat a "Barbecue"

It’s kinda all about where you grew up. I love it all. I don’t think we have a signature ‘cue here Georgia but there are some world-class barbecue joints in Atlanta. The mustard-base low-country style in South Carolina is freaking delicious. Alabama white sauce is not something I grew up with in south Alabama (more of a northern Alabama thing) but it’s damn good, especially on turkey. Texas brisket is really good but I’ve also had some brisket in South Carolina that I thought was better than the Texas stuff. Memphis dry-rub ribs are delicious. It’s all good to me.

Yet almost all of the states mentioned screw up the pork, maybe need an education. Also SC has phenomenal brisket and ribs all over the place as well as superior sauce to tomato based garbage.

Sounds like someone that hasnt done a lot of traveling. I have had bbq in every state mentioned and unfortunately for my ticker way too much of it. Its a two headed monster at the top with SC dominating pulled pork and hash and Texas with Beef. Im willing to give Memphis and KC ribs so they dont feel left out.

That is the largest menu I have ever seen for a bbq place, and half of it is breakfast food. No way they are doing anything top tier like that. Probably all pretty good though to last that long.

I’ll just add that I prefer the Eastern NC vinegar based sauce a lot better than any ketchup based sauce.
