re: My pastor and good friend is a Cincinnati guy. Loves the chili. I thought that was bad.

Yeah....scrapple and goetta aren't the same thing, just the same concept of adding a starch to help stretch out the meat. I've had scrapple, it was very meh. Don't remember how they make it. Goetta on the other hand is genuinely tasty.

Not sure what Skylines recipe is, but the primary spice in Cincinnati Chili should be Allspice, with a small amount of cinnamon to compliment it.

Gives it a very Mediterranean type of flavor. Like something you would order at a Greek restaurant.

Ate at Ali baba Mediterranean grill today and it was great, maybe I’ll try it.

If you try Skyline, just be aware it's the cheap, greasebucket, fast-food version of Cincinnati Chili. So while the flavor is generally correct, temper quality expectations accordingly.

Old world sausages have all sorts of non-protein elements. Sausage Lyonaise has pistachios incorporate into the mix.

Meat in tube form is among the greatest inventions in culinary history. You take crap meats, mix it with spices, stuff it in the poop chute, and make it shelf stable and delicious.

Definitely deserving of a "Real Men of Genious" award.

Skyline, whatever is not even close to chili. I spent too much of my childhood in El Paso, I know what chili is supposed to taste like, look like, just freaking be.

And those are just the two near Lexington. Looks like Northern KY and areas near Louisville have a ton of these places.


When I saw the pic of that I am very glad to avoid it. I rather eat healthy foot that isn't process foot. Noodles and sausage aren't really healthy for anyone. That is why you see too many people with health issues and being fat!
