Cinnamon is actually a frequent ingredient in authentic Mexican cuisine. I’m not sure it’s why I don’t like the actual concoction “Cincinnati chili,” but I just don’t. But again, more conventional chili on top of spaghetti with onions and cheese, etc.? That is good stuff.

That’s not too bad. I put Hershey’s unsweetened cocoa in mine to give it a bit of a mole undertone.

Rice and barley have been used as meat stretchers in southern sausage for as long as people have been making sausage.

Oats is probably what they had available in the Ohio area.

I'm sure there is a traditional sausage out in the midwest made with cornmeal, hominy, or polenta.

Cinnamon in chili sounds gross to me, though.
