Or, it could just come down to a matter of preference. Brisket shouldn't need it. Most beef shouldn't need it. I like wet and dry ribs. I sometimes do chicken with just a rub but most times I prefer chicken with sauce on with a slight char to the sauce. Whenever I do sauce though, it's always at the very end of the process. One of my kids likes his sauce on the side and not cooked onto the meat.

Burnt ends are fantastic. But KC burnt ends, the gold standard, are always smothered in sauce.

I already have the following home recipes that I like better than what I can buy

1. Ketchup based sauce
2. Vinegar based sauce
3. White sauce for chicken
4. Dry rub


Once I get my mustard sauce down I am set



Good BBQ does not need sauce..you are correct....but good sauce improves any BBQ.

Best mustard sauce for me personally was a place close to Lake Tuscaloosa...think it was a Woodrowes.

long history of the family BBQing in Tuscaloosa, Woodrowes, Archibald's...all the same family. Still have a place but the sauce is not the same to me.

I am not a big mustard guy...but I love a good mustard sauce on BBQ sometimes.

All you BBQ “purists” who can’t appreciate all the various styles are nothing more than meat bigots. Tomato-based, mustard-based, vinegar-based, they are all excellent in their own way. White sauce is really good, too.

Dry rub only is my least favorite style, though. That’s not BBQ, that’s a glorified pork chop. A tasty pork chop it may be, but a pork chop nonetheless.

Beef brisket is good as a change of pace, but should not be the primary focus of any accomplished pitmaster. I feel like this should go without saying.
