two that come to mind
In 1996, as a redshirt freshman, Shaun Alexander rushed for a school-record 291 yards and four touchdowns in a 26–0 victory over rivals LSU at Tiger Stadium
2001 at tennessee, kelly Washington had 11 catches for 256 yards
honorable mention
2002 Cotton Bowl, Roy Williams caught four passes for 142 yards including a 51-yard touchdown. He also rushed for a 39-yard score on an end-around and set up a touchdown with a 76-yard reception.

I'd nominate John Bond of MooState. He is the only QB in history to beat LSU four years in a row.

Darren McFadden in 2006 and 2007 was a nightmare for LSU. Numbers-wise, he might not have had the most impressive stats, but I remember him being a game changer.

I know this isn’t the topic but LSU’s coach and QB really helped a brother out in 1994. LSU jumped out to a 23-9 lead and Auburn’s offense couldn’t get anything going. Then With 12:14 remaining in the game Jamie Howard threw over the middle and Auburn’s Ken Alvis intercepted and ran it back while running over Howard and scoring a touchdown. It was know 23-16.
Just over a minute later Howard threw into triple coverage on 3rd-and-10 and was picked off by Fred Smith at the 32-yard line. Smith dove over two LSU Tigers into the end zone to tie the game at 23.
LSU then embarked on a 13-play, 70-yard drive that drained 5:42 off of the clock. But the drive stalled, and LSU settled for an Andre LaFleur field goal to give them a 26-23 lead.
Auburn went three-and-out and punted back to LSU with 3:42 to play. All LSU needed to do was bleed the clock to end Auburn's winning streak.
After Auburn used its last timeout to set up 3rd-and-4, Howard again threw into triple coverage. The ball was tipped and picked off by Brian Robinson, who cruised into the end zone to give Auburn the unlikely 30-26 lead.
LSU quickly moved the ball into Auburn territory, but on 2nd-and-10 from the 25-yard line. Howard again threw into triple coverage and was again picked off by Robinson at the 10-yard line. Robinson was blindsided by an LSU wide receiver at the 30, the ball sprung loose, and LSU recovered it at the Auburn 47 with 44 seconds left.
After a completion got the Tigers to the Auburn 32, Howard went to the end zone, but the pass was intercepted by Chris Shelling to seal the game and cap off one of the most improbable comebacks in SEC history.
I had walked out of this game at the 12 minutes left but went back in and saw one of the greatest comebacks of my life.
One of the dumbest coached games ever by a head coach. Curly Hallman and Lyn Amedee as OC.

Jaylen Waddle against Auburn this year, 4 TDs AND he was the 12th man on the field on the game sealing penalty. Very impactful performance all around.
