Yes, he was molded after Billy Cannon who unfortunately was not fictional.

Yes.
Although almost certainly an FSU based fictional team, wasn't The Program filmed at Williams Brice and the USCe campus?
I really can't think of others in film outside of a mention of Ewan McGegor's rival for his girlfriend playing football at AU in Big Fish
Although, Bama did have the most famous fictional character outside of film and a mythical legend on par with Bigfoot in Duron Carter.

Good movie
As for Auburn football, "Shutter Island" with DiCaprio could be viewed as a fictional study of many actual Auburn fans. No mention of the SEC in the film, but if you have seen it and you are an Auburn fan, you may get the conclusion more than most fans.

The character lattimore wasn’t originally a part of the script for the program. The director read a SI article about usce and a steroid scandal. The director then created lattimore based on stories about the usce players involved in the scandal.

These scene is based off an ncaa testimony about a coach describing an interaction with one of y’all’s dline men. I think the actual story was dude got moved up to second team and was so pumped he smashed a car window out with his fist after practice

Yes and no.
The film was set at "Louisiana University", with some ridiculous band-aids applied to not use any LSU branding. Why? Because they wanted some legal defense against the inevitable comparisons of Gavin Grey to Billy Cannon.
However, the film didn't exactly avoid those comparisons. Grey wears #20, is the hero of the Sugar Bowl, and has a successful, but not Hall of Fame worthy, pro career (for an AFL team). But going too close to Cannon in 1988, only two years after his release from prison for counterfeiting, wasn't something they wanted to touch. Cannon considered suing anyway, but dropped the idea after watching the film.
The original Frank Deford story was set at the University of North Carolina, but UNC did not want to work with the project.
That's different from Forest Gump, where the whole point of the story was to have him meeting famous real people. Some fictitious version of the University of Alabama would not have worked.
