There's been a team or two with a good offense (sorry LSU) or defense but none more dominant on both sides of the ball

They're a great team, but not a greatest of all time team, and that is ok. Nowhere near 2001 Miami, 1995 Nebraska or 2019 LSU type teams.

LSU averaged 550+ ypg and 50+ ppg and they did it against 7 top 10 teams, and 4 top 4 teams. You can't even compare Mendoza to what Burrow did. Burrow finished 2019 as the only player in history with 6,000+ yards and 65 touchdowns.

Burrow had 65 touchdowns that season. Mendoza is no where close.

Yeah I think 95 Nebraska is still the GOAT. If anyone doubts this, go watch the Fiesta bowl against a good Florida team. Its on youtube
