Agree. Most southern states do something better than everyone else when it comes to BBQ. I don't get the arguments at all. Just enjoy great food in the south. Nothing else matters.

In Oklahoma we get a good mix of KC and texas bbq.

Yeah KC makes some great brisket and I'm not surprised. Back when they burst on the scene some of the bigger names in KC brisket spent time in Texas learning from the master cooks here. I read an article about KC bursting on brisket scene and they talked about where they learned their craft. They definitely ran with it and added their own flair. It's damn good.

I took a road trip through most of the southern states about 6 years ago and was impressed with most of them when it comes to BBQ. For Brisket? I prefer Texas and KC. For ribs? The southeastern states. Texas just doesn't know how to make great pork ribs. Beef? yeah but not pork.
Found some fantastic little hole in the wall bbq joints driving through Tenn and South Carolina. The ribs were incredible.

Yeah I will watch for sure. These BBQ joints make some really good money if you do the math on them, and once families start expanding they all fight over control. It is a shame, but sometimes it is really hard to work in a family business. Someone always does more work than someone else, and it is difficult when employees who are family and not pulling their weight because the business suffers and it affects everyone and it's hard to fire them.

Then you have the splitting up of the pie, which is another sticky point. Once you get a bunch of 2nd generation siblings, and then the next generation comes along and there will be brothers and cousins, and there just isn't enough money all of a sudden, and it gets tough.

Too many chiefs and not enough indians.
