When I lived in Jacksonville, worked with a good man from South Carolina. We were aircraft maintenance inspectors. That guy made a damn good hog with vinegar based sauce and would fight you if you came near it with any mustard! He used jalapeño and habanero peppers in it. Might wanna grab a big glass of sweet tea. God rest him.

Depends on what you're cooking... propane in an Old Hickory smoker with a hickory box is great for consistent heat and flavor for a whole hog. If I'm cooking steaks it is awfully hard to beat a PK and charcoal with hickory, oak, apple, or pecan mixed in. I do not enjoy cooking on a gas grill... may as well cook in the wall oven in the house.
Although, one of the best pizzas I've ever eaten was cooked on a pellet grill with hickory... the flavor was excellent!!
