I know we have a lot of Texans on this board. This is a pretty good documentary on Texas BBQ with a focus on Lockhart, the Texas Monthly top 50(comes out every 4 years) and a couple of family feuds that occurred as a result. I heard about the feuds, just didn't know the details.

I enjoy every state’s barbecue.
NC
SC
GA
TN
TX
AL
Even as waaay far north as Pierce’s in Virginia.
Best I’ve had was in Latta SC, though. I wasn’t expecting that.

BBQ has never been as good as it is right now nationwide. There are multiple places statewide in Texas that are fantastic.
As much as I hate hipsters, I kinda give them a lot of credit for pushing this BBQ craze we are currently in.

Agree. Most southern states do something better than everyone else when it comes to BBQ. I don't get the arguments at all. Just enjoy great food in the south. Nothing else matters.

Hipsters are our useful idiots when it comes to beer and BBQ.

You are not a man if you aren't willing to die or kill to preserve the sanctity of your family BBQ recipes.

Yeah KC makes some great brisket and I'm not surprised. Back when they burst on the scene some of the bigger names in KC brisket spent time in Texas learning from the master cooks here. I read an article about KC bursting on brisket scene and they talked about where they learned their craft. They definitely ran with it and added their own flair. It's damn good.

Most people get theirs off the internet, nowadays. Also, I haven’t been to a cookoff in years, but I heard they’re full of pellet smokers, now. That’s just cheating.

There is even some decent BBQ in Louisiana now. It has become mainstream but I think NC BBQ is the best Texas is solid but Memphis is overrated

I took a road trip through most of the southern states about 6 years ago and was impressed with most of them when it comes to BBQ. For Brisket? I prefer Texas and KC. For ribs? The southeastern states. Texas just doesn't know how to make great pork ribs. Beef? yeah but not pork.
Found some fantastic little hole in the wall bbq joints driving through Tenn and South Carolina. The ribs were incredible.

I was just at Memphis in May… not a pellet cooker in sight.

Never been (although I want to try it) but I have heard great things about Sweatman's BBQ in Holly Hill SC. Pre-COVID it was served cafeteria style, but now I think it is a more traditional with an entree and a couple of sides.
For as small of a state as it is geographically, SC has a huge variety of BBQ styles and sauces.

Yeah I will watch for sure. These BBQ joints make some really good money if you do the math on them, and once families start expanding they all fight over control. It is a shame, but sometimes it is really hard to work in a family business. Someone always does more work than someone else, and it is difficult when employees who are family and not pulling their weight because the business suffers and it affects everyone and it's hard to fire them.
Then you have the splitting up of the pie, which is another sticky point. Once you get a bunch of 2nd generation siblings, and then the next generation comes along and there will be brothers and cousins, and there just isn't enough money all of a sudden, and it gets tough.
Too many chiefs and not enough indians.
