Recently I would go with Justin Jefferson. 3 Star and last commit in the 2017 class. Not much fanfare coming in, but proved to be an absolute weapon for the Tigers

Dexter McCluster was another

Quite possibly the most ridiculous overachiever in Kentucky history. 3 star that wasn't on anyones radar turned SEC defensive player of the year.

Josh Allen was the lowest ranked recruit in our class. Fast forward a few years, he becomes the best defensive player in school history and wins almost every national award for his position

I thought Clyde was a higher 4 star but I see he was also a 3 star. Good call

Those are surprising. Davis was unreal last year. Cant stand Pollack, seems like a huge douche, but he was a hell of a football player.

recruited as a fullback, then switched to DT his freshman year before becoming a 3 time All American DE. Great choice.
I always think of Tim Jennigns for this question too. 2* recruit (if that) whose only other collegiate offer was south carolina state. Was draftd in the 2nd round and played 10 years in the nfl

Morris Claiborne was 0 stars when he committed, later on became a 3 star.
Lloyd Cushenberry was a 3 star and didn’t have a spot in the signing class until signing day, ended up started for 3 seasons including the 2019 NC, now starting C for Denver

Was a 2 star on 24/7. People forget he was committed to Monmouth.

Grant Morgan was a 1* walk-on and went on to lead the SEC in tackles.

how many 2-star recruits throw 43 TDS and 370 yards per game?

Josh Jacobs for Bama. Was a mid 3 star with only a few offers from smaller schools very late in the 2016 cycle. Bama missed on a couple higher ranked targets and offered late. Turned out to be a great one, now killing it in the league. Turned out much better than BJ Emmons obviously, the much higher ranked back in Bama's class that year.
Levi Wallace would be another good one. Was an unranked preferred walk on at Bama in the 2014 class. Won two national championships in college, spent 4 quality years on the Bills, and just signed a two year deal with the Steelers this offseason. Not the fastest guy but he's got those long arms, not your average walk on obviously.

Honey Badger was a 3-star, I believe.

Mike Evans. He was a 3 star prospect who didn’t start playing football until his senior year of high school. He hasn’t had a sub-1000 yard season since high school.
