Cedar Plank, Lemon and some Salmon seasoning. All you need.
Dont put any smoke to it if you use a Cedar Plank. it will add a nice smoke/cedar flavor.
No cedar plank use a fruit tree like Apple.

maybe a touch of Olive Oil on the top.


Dallasga6 is that Fruits and Cheese (debate on weather a tomato is a fruit or a vegetable not withstanding)

That is damn near communist..... Tomatoes and Cheese when we are discussing BBQ....

Red Oak is good stuff for the cost.

I’ve had two Chargrillers with gas on one side and charcoal on the other and they’ve been great. Sear steaks with charcoal or whip up burgers over gas. It’s ugly as shite but very functional.

I smoked about 30 pounds Sunday....that stuff ought to be illegal!!! It is EASY to do and eats like no ones business!!! I don't use ANY soy or ginger...in fact, the only seasoning I use, after brining and rinsing well, is Alder smoke.....and it is like eating butter after about 2 -1/2 hours at 160 degrees. Slice it thin, a fresh bagel, cream cheese and thin Vidalia onion....man its good! Also very good chunked in a salad, used like tuna to make tuna salad or right by itself with some grilled asparagus and a Sauvignon Blanc....it doesn't get much better

Stripers and hybrids work well also....but the best, by far, hands down, in my opinion, are Cero Mackerals...not Spanish (also good), not kings and not wahoo...all good smoked....but a 4-8 pound cero at 160 degrees for 2 - 2 1/2 hours is beyond good!

And then eat erything under the shell but the dead man's fingers....mustard and all!!! I hear you....i'd rather eat blue crab than anything in the ocean but its getting nearly impossible to eat them unless you catch them yourself because they clean them before they cook 'em and it ain't near the same....good but nothing like opening one up full of mustard or roe or both....

Hard to eat the roe though....game warden frowns on it getting to that point....

Looks like I got talked into ribs for the 4th. Time to dust off the Weber.

If you’re cook temp is 225 and the ambient temp in the sun is 125...how many coals do I need to actually heat. 3? 5?

Sorry if this has already been said.

Costco sell the Kamado Joe's at a discounted price. You can look up the locations and dates. Its a traveling sell and it moves from store to store. You will save a few hundred dollars. I think it was right at $800 for the classic.

The Kamado is just as good if not better than the green egg. It's the same basic design yet it has better options and is cheaper. The new rain proof top is nice. I have 3 smokers. Two I built and I use the Kamado the most.

Completely agree with all of this. Lat time I did it I switched to avocado oil and it was even better.
