Dallas, what cylindrical coals are those?

Get em at Academy, think they are $16 for 30lbs. Have a hole thru center that helps them burn good. Did ribs for 2hrs without adding any extra.

Why a high temp?

I thought low and slow was better? No?

(Not an expert).

I'ts 8:50 and you haven't started yet, and you are doing high temp, I'm guessing it's something that cooks super fast.

Lemons and butter.

Hmmm... something seafood... muscles of some sort... maybe?

Someone is so obsessed with you that they stay awake at night to see if they can downvote your posts.

Interesting case study in obsession.

You eat those raw though.

Why the high temp? I thought the whole idea was to go slow?

Well I forgot to do an after picture as the Elijah Craig Bourbon and desire to unsafely blow up fireworks kicked in.
So I have no quality entry for the Grillfest.

However I do have two before pictures.
One is KC style the other Texas style.
According to feedback I did OK.
6 hours on the BGE at 225.
2,3,1 method

It was a late night for me!

My poke shoulder butt which weighed about 8 pounds was done around midnight CST. The temp was about 200F after smoking it on the pellet grill for about 9.5 hours @ 225F. Here’s some pics and every Dawgfan knows you gotta have a little bark to go along with your bite.

I brought the butt out to the farm where the extended family is located so I just got what was handy here. It is from the Sharper Image though.

Edit: I remember the instructions including something about posting a pic of a firearm so here’s one from the arsenal. It’s America baby.
