I'm pretty sure human beings have been slow cooking large cuts of meat since before civilization began.

Probably started in Africa ca. 300,000 years BCE.

For brisket I like a little chili powder in my rub and a little garlic, salt and black pepper. But yeah as a whole that is about all you need. Smoke is pretty important. I mix mesquite and hickory usually for brisket. I like pecan for pork butts and a rub that is sweet and spicy.

Aggie and SC have this debate every year. It's just a fun lighthearted part of the front office induced rivalry.

The last commercial brisket I had (NC) Wa's chopped as "soaked" in something. Awful.

Who does that to brisket? Somebody that's reheating it or who dried it out when they cooked it the first time. They can fool the masses with that stuff, but not folks that know smoked meat.
