I was in Houston visiting a friend at MD Anderson and his request to have barbeque for what turned out to be his last time had me on a mission.

I asked around and then looked online which both pointed me to Pinkerton's. It was incredibly good and I have had BBQ all over the country.

Yes, I’ve heard about Truth BBQ getting high praise also. Prices are going up.

pretty sure that is what makes Pulled pork BBQ and brisket a meat that you smoke (hence, NOT bbq)

Amarillo is ok... but it’s nothing special compared to Houston, Austin, and some of the other usual spots along the Texas bbq trail.

Yes. The article states that the south stole the cooking style from other cultures. So did Texas. So what's your point?

When I went, brisket was pretty average, but the ribs with the candy paint were fantastic.

If you're talking pork butts I might agree, but if we're talking Whole Hog, that's something TOTALLY different.

I'd say that's 99% of what people make, the shoulder. The real deal is the whole hog.

BBQ (or slow cooking meat over an indirect flame) comes from the native Americans. We "discovered" BBQ when Hernando Desoto was was exploring present day Tupelo, MS. What was the meat you ask? Pork.

The entire reason BBQ exists was because pork was abundant and cheap for colonists in the South.

Texas didn't enter the fold with beef BBQ until many moons later.
