TX #1 just because BBQ is best served in Tex-Mex dishes and this is the direction the whole state is going in.
If we’re talking pure BBQ it’s Memphis just because that means ribs. I can’t eat a plate of just brisket but I can ribs. Memphis itself sucks at it though. Their “best” places don’t even pull the silver skin.

I smoke some killer pork butt....and pork loin. If ya'll have never smoked a whole beef tenderloin then ya'll are missing some killer beef. Also smoked yard bird is hard to beat

Honestly- I like them all. You can find good BBQ in every SEC state.
Not gonna lie, I’ve been very impressed with the BBQ I’ve had in Arkansas. AR’s food scene is slept on.

Sorry but Missouri bbq sucks. Yall like the sweet style of sauce and it ruins it.

I hate to admit this coming from STL, but KC is the BBQ king of the world. The Kansas City Barbeque Society sanctions over 375 BBQ cookoffs across the U.S. annually, including many in the KC area, making it a hub for barbecue enthusiasts and competitions.
And Arthur Bryant's there put BBQ on the cuisine map long before it had the popularity it has today. It was the 1st BBQ joint to regularly make the NYT best restaurants list. To be honest, though, I think many BBQ joints today are better than Arthur Bryant's, which had a kind of a love it or hate it flavor.
But I will say that STL is now home to many great BBQ joints as well -- Pappy's and the Shaved Duck for 2.
Just like everything else, great BBQ is in the taste buds of the diner, so to speak.
I like just about all BBQ -- from Texas to Alabama. What's not to like?

I would encourage any of the rant to come to KC just for a short weekend. Great food, good vibes in the city and area, growing with some pace, but not too fast, just an overall great place to live. For BBQ, yes it's great, it's everywhere, and almost any hole in the wall is killer IF you are in to a sweeter sauce. That said, I host a TON of visitors at the company I work for and every work dinner, lunch, catering is always BBQ which makes it a bit "tired" for me. I've had Memphis (good), Carolinas (vinegar throws things off for me), and Texas but it was at Buccee's trying to GTFO of Dallas so I suppose doesn't count

My home brew bbq sauce, even here in central Alabama, is vinegar pepper based lol.

Taking the tougher sections of the same animal that gives us ribeyes/tbone/strip/hanger/sirloin/flank/chuck eye/chuck roast/ beef ribs/bottom round/etc and cooking it slow doesn’t mean it is barbecue. You guys smoking or cooking slow shitty cuts of beef does not make it barbecue.
My best side diah is smoked gouda mac n cheese. Just because I cook it on the edge of the pit doesn’t make it barbecue.

BBQ requires a pig and a hickory tree. Any smoked meat which wasn't cut off a pig and any wood used other than hickory is not BBQ. It can be very tasty but turkey smoked over cherry is not BBQ any more than beef smoked over mesquite is....

Biloxi Bacon is very tasty. Its smoked. No one in their right mind would call it BBQ.
What folks do with a brisket is, apparently, tasty - I don't particularly care for smoked roast beef with ketchup but to each his own. Tasty or not it ain't BBQ...its smoked brisket. It is a cow.
It is very common to smoke chickens. It is very common to slather roasted, griled or smoked chicken in BBQ sauce and call it BBQ'd Chicken. Its BBQ'd....it ain't BBQ. The same goes for ribs....they are BBQ'd, they aint BBQ. Suasage, turkey, deviled eggs...all can be and shoould be cooked on a smoker....none are BBQ because BBQ requires a pig and a hickory tree.....

It is....but it is also indigenous to Georgia. It is the original 'BBQ Sauce" according to many "experts" and has been used in North Carolina, South Carolina and Georgia for years and years. Basically 2 ingredients.....vinegar and pepper. There are variations...mine includes about a half a teaspoon of tomato paste, about 1/4 cup of butter and about a cup of apple cider or white vinegar and red pepper to taste....it will make a puppy pull a freight train....
