Let's go on with your dumbass argument. Stealing a base is okay because the base is still there implanted in the ground. Stealing a candy bar is wrong because you actually take the candy bar. Which means your argument is I have to remove the item in question from use of the person who owns them for it to be wrong.
Can the person still use their signal after I have "stolen" them? Yes. Which by your own standard means there's nothing wrong with it.

Ya, because they were in enemy territory. Similarly, you obviously aren't allowed to have a coach sneak onto an opponents sidelines or hack into their headsets
If you have signals on the field that your opponent clearly recognizes, that's your own damn fault

Is something wrong with stealing signals? If I'm in the box and I can figure out the opposing team's signals during the game then be better at using signals.

Actually, you do. HUNH isn't "hurry up and snap the ball." It's hurry up and get to the LOS so the defense can't substitute. The offense can be at the LOS and ready to snap for 20 seconds while they look over for adjustments to whatever the play call might be and then shift accordingly.

Well, to use your own analogy, when a team in baseball "steals" the signals, doesn't the same team who has the signals still have them to use if they want to? All the other team did was to have someone observe the signals and then tell the rest of the team about them.
If someone watches your girlfriend/wife walk down the beach in a bikini and then told his buddies about her, did he actually "steal" your wife?
