I think Kyle Shurmur probably deserves some recognition. His numbers during has last two years at Vandy were very solid, and he QB'd two different Vandy teams to bowl games.
As a State fan, I've always thought Tyler Russell was better than he gets credit for. He was a talented guy and had a very nice 2012 season. He just was not a great fit for Mullen's offense and then eventually up getting overtaken by Dak. But I would've loved to see him in a more pass-oriented offense.
Others that have been mentioned are very valid, don't really want to rehash what others have said. I do think Shaw is probably the definitive answer to this question though, three straight 11 win seasons for a guy that was very much under the radar is hard to top.

Biased, but I'll nominate Dak. Put him on any Big 6 SEC team with the stats that he put up and he's a late 1st, early 2nd rounder.

I don't disagree with your second statement, but he was the First Team All-SEC QB two years in a row and got Heisman votes in 2014, so I have a hard time calling him underrated.

Fair enough. I guess, personally, I look at production vs. draft slot as a rating for each player. I certainly don't think he's underrated among SEC fans.

That was a fun offense to watch when it was rolling, very much a downhill running team but very effective PA/rollouts and Allen threw great well on the run. Have to be happy to have Sam back up there, the OL was tremendous

Chris Leak is really over looked imo. Dude was solid QB for years who won a National Title.

I'd definitely have Connor Shaw over Coker.

Coker wouldn't win any "entire season/career" awards because the first half of 2015 was pedestrian.
However, his SECCG/Playoff run in 2015 was near perfect, especially in a pro-style play-action offense.

What's funny is I think Marshall was underrated by Auburn fans more than any other fanbase. He terrified most of the rest of us.

I HATED when Georgia had to play against him. Absolutely nothing about him screams great player until you watched the game and wondered how South Carolina had 35 points on the board. Shaw was never an explosive player, but he was incredible at getting just enough yards to move the chains. It was annoying.
For us, it's Murray. He played on some teams with really bad defenses which kept him from probably getting the credit he actually deserved, but that guy broke a lot of SEC passing records.
