I think for Alabama it's Matt Caddell (2004-2007).

He was the least celebrated of the trio of receivers that Alabama had in Saban's first year (DJ Hall and Keith Brown being the other two) but he stepped up in a variety of different ways when his team needed him.

Jalston Fowler (2010-2014) might be just behind him.

A few that come to mind

Josh Reynolds - tied Mike Evans TD record, ~1800 yards in 2 years, set to be a top 3(ish) WR in A&M history.
Michael Hodges - walk on turned All Big 12 player & a leader on the defense.

Jacques Smith was a 5-star coming out of high school. He isn't underrated.

Kenny Hilliard comes to mind although I know he still got plenty of love but he was never a feature back. The dude was a beast but he played behind Ware/Ford, then Hill, then LF. He was an absolute truck, and him being hurt on the first series of the Bama game his senior year is the reason we lost.

LSU-Jacob Hester, 2 star that turned out pretty damn awesome. To this day, Hester jokes about the recruiting class he came in with. He jokes that going into National Signing Day, LSU had the No.1 class, without him, after LSU signed him, they dropped to No. 3.

I don't know about underrated, but Nick Gentry was one of the most underutilized players.
