Smoked meats are good. Beef is good. Pork is good. Sousages are good. Hell, even turkey and chicken are pretty damn good when smoked. I ain't picky 9n the details.
But if you gotta slather your finished products in fricking mustard?
You suck at smoking meat.
We can all have the beef vs pork debate all day and good points will be made by almost all sides.
But you South Carolina mustard tards are like the special olympics of bbq. Nobody cares what you have to say.

I have driven the length and breadth of Texas and have eaten at every place Texans claim sell BBQ and I ain't found anywhere in the entire state that sold BBQ, gas station, restaurant or food truck...nary a place. Lots of places claiming to and lots of ignorant folks who ought to know better but don't are fooled but when you were raised eating actual BBQ you can tell the difference immediately...if it ain't pig and there aint a hickory tree involved it ain't BBQ.

I was married to a girl from Augusta for a short period in the early 90s. I went to several BBQ joints in the area and found it to be pretty good. I enjoyed the hash too. Never seen BBQ hash before as I was raised on Memphis style BBQ .

Only idiots that fall for maps made for tourism think Austin is in the hill country, it is not. Central Texas is not necessarily the hill country. 90% of Austin is flat and closer to Prairie land. 10% has hills, but nothing that any reasonable person considers the hill country. 15 minutes north west of Austin you get some smaller hills

Let's settle this once and for all. Real BBQ originated in the deep south. It features a molasses based sauce slathered on cheaper cuts of PORK because it was a poor man's food invented to make cheap meat more tasty.
Brisket while OK is NOT BBQ not matter how it's cooked and what ever sauce is used. This spicy crap the put on the meat sucks. Which brings me to my final point. Texans do not know how to BBQ.

Poor folks in the south also ate squirrel and roadkill. Doesn't mean it's good eating. BBQ may have started out as only pork but it's since evolved to include brisket. And a well smoked well seasoned brisket is the most flavorful food on the planet.

This is a good point, I just don’t associate beef with bbq. Call it semantics but in my mind brisket is just another kind of beef dish. Sort of how Korean bbq, while good and uses the name, is not really anything I associate with actual bbq.

Mustard based is just not that good. I mean I will occasionally have a Maurice's sandwich or something, but when at a buffet I literally never use the mustard sauce. Always vinegar.

I read the article. Has Sweatman’s listed as one of the top 3 of South Carolina style BBQ. They’re resting on their laurels these days. I’ll put Lewis’s and Rodney Scott’s over Sweatman’s these days. FWIW, Rodney’s mop sauce ain’t mustard based. You can ask for it, but for me, mop sauce all day, every day
