I’ve had some of the best of every kind of food in some of the strangest places. BBQ in Salt Lake City. Mexican food in some town surrounded by FLDS enclaves.

I travel around a lot around national and state parks in the West and it never ceases to amaze me what had made it to some of the most remote places in the country.

We're starting to get some cool fusion stuff, like the Tex-Mex/BBQ fusion you see at Hubbard's in Dallas.

Corkscrew and Rosemeyer BBQ are both less than 5 miles from my house. Honestly have driven past Rosemeyer hundreds of times always thinking it looked like a pop up BBQ food truck, but now I’m gonna have to go check it out! Pics look amazing

Starting to? Typical Ag, behind the times. Salt Lick was Asian/German fusion in 1967. Founder's wife was a Japanese woman who was trained as a chef in Japan before marrying her USAF husband and moving to Texas.

There are a lot more fusion places on the TM 50 list than there should be. The lead pic for #1 Burnt Bean is the founder holding a Korean fusion rib plate. Interstellar has a pretty strong Tex-Mex infusion. Heck, even Rudy's, before the franchising started that ruined it, had significant Mexican cuisine influence.

I like Lexington BBQ in Lexington, NC which has an annual BBQ festival. I get the sliced pork, and can never turn town hushpuppies...

When back in Texas I love having the BBQ brisket and sausage that I grew up on. Lockhart BBQ is a favorite (Kreuz and Smitty's); also City Market in Luling...

Yep. Despise and will not buy cheating methods at home much less competitive cooking. Smoking that requires throwing logs in fire box the way it was meant to be for smoking meat. Drinking with friends and throwing logs in firebox for hours on end is the smoking should be. Freak all the propane and pellet bullshite.

…but, I do it the easy way….electric and chips (mainly hickory and apple) …. Smokin Tex’ rig.

Burnt Bean is legit, I know of what you speak when you talk about some of the hipster joints TM has forced into the lineup. They aren't far from the house so we go maybe once a month or so. Here is a cool video of their story.

If your ever on the SE side of SA be sure to try 2M Smokehouse, they are near my office and I'm there regularly. They have made the top 50 the last couple of times, imo their brisket is better than BB but can't go wrong with either.

Had a pellet smoker/cooker at one time. Horrible. Got rid of it for about 15 cents on the dollar and went back to my trusty offset vertical smoker with a mixture of oak and hickory.

Don't see the infatuation with Carolina mustard/vinegar based sauces. Give me molasses based any day.

Depends on what you're cooking... propane in an Old Hickory smoker with a hickory box is great for consistent heat and flavor for a whole hog. If I'm cooking steaks it is awfully hard to beat a PK and charcoal with hickory, oak, apple, or pecan mixed in. I do not enjoy cooking on a gas grill... may as well cook in the wall oven in the house.

Although, one of the best pizzas I've ever eaten was cooked on a pellet grill with hickory... the flavor was excellent!!

When I lived in Jacksonville, worked with a good man from South Carolina. We were aircraft maintenance inspectors. That guy made a damn good hog with vinegar based sauce and would fight you if you came near it with any mustard! He used jalapeño and habanero peppers in it. Might wanna grab a big glass of sweet tea. God rest him.

I am married to a 6thgeneration NC girl out of the Piedmont area. There is no such thing as "Mustard" based sauce in NC. That is specific to SC and it is NASTY!

Why would anyone eat mustard Bar-B-Que is beyond me. Guess I'm spoiled on that good ole vinegar base.
