It really does depend on the timing of the game. I think we were on the road the whole month of October last year and everyone knows that is the best weather month in the south 9 out of 10 years. The after party on the square is where you cats have us beat.

The last State game I went to was Auburn @ Starkville 3-4 years ago. It was pretty great weather and atmosphere.

The Square is good for kids. It seems a little more New Orleans-esque than it used to be. Maybe I’ve outgrown it.

But, you can't beat the Cajun cuisine. Couldn't go wrong with boudin, jambalaya, sausage, meatpies, etouffee, and/or virtually anything else seasoned well with some Tony Chachere's. Add in some gumbo in place of chili when it gets cold and I'm all in.

Boils are not as common at tailgates as commercials would have you believe. But Jambalaya, Gumbo, Boudin, Etoufee, fried seafood, etc. are regulars. Cajuns know how to cook large quantities of amazing food for a relatively cheap amount which is one reason why we love to share it with everyone.

Although my signature pic might say otherwise, I'd say Mizzou is more likely to take that brisket (the point at least) and make burnt ends with it. And as a side, you'd obviously want more burnt ends. And if you're from the east side of the state, you might be smoking some pork steaks. How those haven't caught on in the rest of the country I'll never know.

This. Unless it’s a baseball tailgate then you aren’t going to find a seafood boil. But as already said you don’t have to look hard for plenty of other famous foods at a tailgate. I’m really excited to fire up my jambalaya pot on August 31st.

Crawfish is out of season when football starts, and who the hell wants to stand over a boiling pot all day when it 95 degrees with +75% humidity? No thanks.

If crawfish were in season, ppl wouldn't give a frick about a hot pot. Pastalaya and fried seafood is more the LSU tailgating scene though.

Fight about what? How they're right and it hurts your feelings? Mustard Que is 90% dogshit... I've had BBQ in South Carolina at a LOT of places, and if it's mustard based, only about 1/10 is really particularly good, more than half are barely palatable... And I LIKE mustard... It just doesn't make for a good BBQ experience.

Vinegar on the other hand, offers a much less aggressive flavor profile an complements a well smoked piece of meat. Even a so-so pulled pork sammie is better with vinegar sauce.

Truth can hurt I suppose.

Fortunately, upstate in SC, there are a number of places that do a great vinegar based Que.

It's true... but the issue is one of flavor and viscosity. Mustard Que frequently has the texture of something approaching cat vomit, and the saturation of spices is just too high. A good vinegar sauce is well seasoned but still very thin in consistency.
