bro, that isn't very much I like about texas but if you don't like the brisket you just don't know brisket. yes, there are some bad BBQ places here but the better ones have the best brisket ever. some even have good beef sausage and pork ribs.

you either have the poors, have never been to tejas (don't come in the summer) and have gone to some real shitty places.

This is true as rain....I smoked a lot of pork butts in 7 years in Germany and my neighbors on the economy LOVED my Georgia vinegar based sauce because it was originally German Sauerbraten....vinegar and pork go hand in hand...even those fricking pickled sausages made from pig snout and hawg peckers are fricking delicious....especially with a cold beer...and germans know a thing or 2 about pig cooking and beer...

I will admit that I am not a fan of ANY brisket other than that sold at delicatessans...I have eaten Brisket all over Texas and have had my friends and locals tell me that the brisket I was eating was the brisket that all others were measured by and I couldn't disagree....being all bad the measurement wasn't hard to come by. I've been to the places where local people line up in the morning for a 11 oclock opening...Ive been to people's houses where their families and neighbors swore they had the best brisket in the state...and nary a time was it anything but barely edible. Ive also eaten brisket that came pre-cooked from Sams Club and Costco and it was as good as any....

First off they shouldn't call it BBQ because BBQ requires pork and hickory...anything else is a sad imitation. If they simply called it beef smoked or slow cooked in various fashions it wouldn't be as disappointing....but calling something BBQ requires a certain level of ethereal correctness....and you can't get there with a cow....

I didn't know about the off-season thing. We always get crawfish in Columbus, GA (2 hours away) any time of the year so that must be a local thing. There is an enormous seafood market there. Hell, they might just be selling us Frozen stuff from last season. It is delicious nonetheless. They put it in styrofoam coolers on ice and sell it by the pound year-round. I am genuinely interested right now about the crawfish market, lol. Forgive me for my ignorance baws.

It was also German immigrants (along with Czech and Polish immigrants), who settled in Central and South Texas, who incorporated smoked sausage as a big part of bbq in the Lone Star State.

This is why the SEC is the best damn conference in the land. Not due to field dominance, overwhelming future NFL talent, or national championships. We have a five page thread on tailgate rankings. Indeed, football lives in the South.

Where we live is perfect for BBQ (about 30 mins from the N.C./SC border in Spartanburg. You can get your hands on good mustard based, good vinegar based, and even the ketchup shite
