As a State fan we’ve had a myriad to choose from, but I can’t believe nobody has said the 2016 South AL game where Mullen wore shorts.

For UGA I'd say the loss at Okie State 10-24 in '09 stung a worse than I can remember. I believe it was the first time we lost an opener since I had been a fan.
Now the three opening wins that stand out to me are
2006 vs. Okie State 35-14
2005 vs. Boise State 48-13
2003 vs. Clemson 30-0
And of those the one that logically was the best was 2005 over Boise State. We absolutely crushed them, and there was talk at the time how they were the next best thing outside of the major conferences-that made it even sweeter.
Now the three opening wins that stand out to me are

Worst without a doubt Jacksonville St, not even close.
Best, probably Auburn 1992, won 45-21 and the game wasn’t as close as scoreboard indicated.

It's strange, but I can't recall many great opening wins for AU. We've historically started out slowly, and in our most successful seasons we have generally opened with cupcakes.
I guess the most memorable in in a season opener for me was 1987's 31-3 blowout of Texas, one of our rare early season victories over a traditionally elite program. Plus, it was a family reunion of sorts, as some 17 members of my paternal clan were there, including my then 76-year old grandmother, attending her final game onthe Plains (she did live long enough to witness the 2010 BCSC, passing away the following spring just shy of her 100th birthday).
As for worst opening loss, we've had a shitload. Aside from the higher-profile disasters (1992 Ole Miss, 1998 UVa, 2003 USC), I'd have to go with our 1975 embarrassment by Memphis State. It was Shug's final season, we were coming off a solid 1974 campaign and were ranked in the top 10 coming in and were huge favorites, only to lose 31-20 in a game that wasn't as close as the score indicated. It kicked off only the 2nd losing season in the previous 20 years, and ultimately ushered in the soul-crushing Barfield years.

I was at that game, Cutcliffes first year back. I thought we were back on top. Then cutcliffe left 2 years later and then wins went with him.

2006 - Playing #9 Cal in Knoxville. Went up 35-0...called off the dogs and played the scrubs...final was 35-17.

I have to go back a ways just because I'm older than most here, but I'll stop at 1970-to-the-present.
For UGA, my vote for the Dawgs' best opening win would be our 1982 win over defending national champion, Clemson, 13-7. UGA was preseason ranked #7, and Clemson was preseason ranked #11.
Runner-up for best opening: 1983. UGA was preseason ranked #15 and defending Rose Bowl Champion, UCLA, was preseason ranked #20. UGA won, 19-8.
For USC Trojans...best opening win: 2003 on the road. USC was preseason ranked #8 and Auburn was preseason ranked #6. Trojans won, 23-0.

Runner-up: 2016 loss to Alabama, 52-6, the second worst loss in USC history, next to 'SC's loss to Notre Dame, 51-0, in 1966.

Worst opening loss: USC 2005, we all knew we weren't going to be good but what that team did to us was unholy. Second worst was probably USC 2006 because while it was much more competitive our expectations were much higher that year and we still lost badly.
I honestly don't even remember a truly good season opening win since we have scheduled a cream puff to start for so long...

LSU's worst...losing to Wisconsin in Lambeau in 2016 given the venue and all the LSU fans (35K) who travelled up there.

Gary Pinkel started his Mizzou Career with a loss at home to Bowling Green in 2001. We didn't lose another opener until Odom started his career with a road loss at West Virginia in 2016.

That wasn't our opener.
It's before my time and Miami was voted #1 but losing to them 31-4 in 87 is probably the worst.
