Mustard on BBQ is like putting mayonaise on fries.
It's simply not American.

No, it's German.
And Germans know everything there is to know about pork.

No, Germans put vinegar or gravy on their pork (Schnitzel). They put mustard on Wurst.

Senfbraten. Mustard Roast.

Never had Senfbraten. I've had Schweinebraten, Wienerschnitzel and Jaegerschniztel though.

The reason pulled pork falls apart, is the low and slow cooking process "melts" the collagen and connective tissue that holds it together when the animal is alive. Additionally, the slow coking process renders the fat in the meat and redistributes it through the meat. When you break down fat molecules while cooking you turn them into triglycerides and water. Basically, this is what makes the meat moist when we eat it.
Jesus man. You are talking food porn Andy mouth is all wet. Interpret that however you want to

Lol, doesn't understand good mustard and/or pepper vinegar based BBQ. Thinks brisket is BBQ... uhh, no.
You've clearly never been to Shealy's in Batesburg. You therefore don't know good BBQ. I almost feel sorry for you.
Oh wait, you're aggie trash, never mind. Stay the frick out of the Palmetto State.

A well done brisket is absolutely delicious. Well done pulled pork is absolutely delicious. If you're too stupid to enjoy both, that is your loss.
That said, while South Carolina has many good barbecue joints, the best pulled pork comes from North Carolina.

Don't forget about that shytty azz vinegar based crap they call BBQ Sauce in the Carolinas & in Memphis
Best combo for BBQ is a semi-spicy Texas style dry rub, and then top it off with a good thick, tangy , home made Kansas City style BBQ Sauce
No matter what BBQ you prefer Carolina style BBQ comes in last

Texas bbq is trash and brisket is at best a side dish.

Y'all are fricking stupid, All of y'all. Brisket is BBQ, it's a trash meet cooked low and slow, essentially the definition of bbq.
Both brisket and pulled pork done right are awesome, so are smoked ribs.
Pretty much only difference in bbq between the areas is the sauce and Texas likes to use cuts of beef more. Plenty of great cuts of beef that are underrated when cooked low and slow too.
Pork is great and much easier to cook, but a properly cooked brisket is King. Oh and never wrap brisket with anything other than butcher paper.
