First off before eating any BBQ, you should taste it "dry" (without sauce).

The reason pulled pork falls apart, is the low and slow cooking process "melts" the collagen and connective tissue that holds it together when the animal is alive. Additionally, the slow coking process renders the fat in the meat and redistributes it through the meat. When you break down fat molecules while cooking you turn them into triglycerides and water. Basically, this is what makes the meat moist when we eat it.

A lot of people put too much sugar in their mustard sauce. I like mine with more of a kick, less sweet and more peppery.

I'll agree. Sweet or Honey mustard sauces are for chicken tenders. I'll often mix Eastern NC vinegar sauce and SC mustard sauce to make it extra tangy. The NC sauce provides the tang, the SC sauce provides the cling...

The majority majority was wrong. The majority of people like Big Macs and Whoppers. That doesn't mean it's they are best burgers.

It’s bad that I’m a native of NC and once i lived in the midlands preferred the mustard based sauce
But what do I know, I also moved up north and like it better than NC and SC

Another thread about leftovers?

All BBQ is fine, but it's just a way to cook the leftover cuts of meat that people won't pay top dollar for.

This is like bragging on sausage or blended whiskey or lite beer
