Beef has always been more available in a beef state like Texas, so our poverty meat is short ribs and brisket.

"Barbeque" is the Anglicized version of the Spanish word "barbacoa" which was derived from a word in the Caribbean and Florida natives' language. It consisted of roasting meat over a grill consisting of a wooden framework resting on sticks above a fire. The flames and smoke rose and enveloped the meat, giving it a certain flavor. (So, BBQ originated in Flawda.)

So, roasting cheap meat slowly over fire and smoke IS BBQ. That's it.

That's where it gets into "doing it well." You've got to have just the right amount of fat in it to keep it moist.

Brisket is the most flavorful of any meat, not just BBQ, when done right. You can kick rocks with beef ribs though, they are always inferior to pork

Brisket is king in Texas and would likely be in other places too if they knew how to cook it right.

But other places in the south have some good pork based bbq that is mighty tasty too. Pork ribs are probably my second favorite bbq to eat after brisket.

This has nothing to do with barbecue and hog vs. cow, but 25 years ago we made a trip to Texas to visit relatives, and we stopped off at a Dairy Queen in Tyler after crossing the Louisiana line, and they didn't have chicken fingers on the menu, they had BEEF FINGERS (basically "fingers" of chicken-fried steak) which they served with a cup of white gravy for dipping.

I could eat that again ...

I recommend people practice on a small chuck roast before moving to brisket.

225f until the internal temp gets to 203f

I like pecan wood the best. I don't like to wrap it, but if I do, I use butcher paper, not foil.

Beef Ribs and Brisket are awesome, just not BBQ. Smoked meat =/= BBQ. At least to Southerners BBQ = smoked pork.

That whole beef rib is probably a $40 chunk of bone. Think that's why they do short ribs unless you ask the butcher for the whole one.

yeah, I have seen that on Triple D. They dig the marrow out too and add it to the liquid. Never tried it myself, though.
