I ate cornbread that looked EXACTLY like that yesterday except it had garden jalapenos in it. No Pinto this time, straight up garden chili.

Cornbread with meals

Biscuits with Sausage or chicken or bacon and egg or gravy.

Biscuits + Gravy

Cornbread + Bean Soup

Couse grits go with both, as does bacon.

In the end neither is an incorrect choice.

The proper answer, as any Southerner would tell you, is that it depends on the meal.

Cornbread is wonderful but never had biscuits again? And biscuits is a creation of the culinary gods... but never have cornbread again?

This is like asking if you would rather exhale or inhale. You need to do both.

I make a dish in a cast iron skillet in the oven that is like a cornbread quiche

Cornbread
Sweet corn - well drained
Onion - Georgia preferred
Ground lamb or beef - depends on what is on hand in the house
Jalapeños
Cheese - Muenster preferred, but again, mostly what is in fridge
Real eggs and butter
Secret spices - basically what is on hand at the time

Looks kinda like this when done but more firm and cornbread like

I hate most biscuits. Really only like those layered flaky ones occasionally but corn bread all day.
