This is my issue too. The chicken skin turns out too rubbery. And this is after I leave it sitting uncovered overnight and try to dry the skin off before putting it on. I don't do whole chickens enough to really worry about it though.
smoked BBQ chicken is my least fav of any smoked meat. Grilled and slathered/caramelized with bbq sauce is he only way to do chicken for me.

I know that the stuff that I get from Food Lion (on a tip from a South Carolinian who admits that mustard BBQ is retarded) is from NC.
I cannot remember what it is called....but, it is way better than Shealy's vinegar sauce.

Maurice's and the bbq sandwich from Rush's hamburgers are legit the only places I even know to get mustard based bbq.

I dont get the hate for brisket. I love pulled pork, and I loved sliced brisket. The only Texas thing I dont like is beef ribs and their beans.

I can't let this pass. Beef ribs are the cadillac of the world of smoked meats. They're amazing when done right. Simply and truly unbelievable. I can't even describe how amazingly good beef ribs are. I can't do them, but I so want to learn.

Food Lion is the only place that sells it that I've found.

People like pork cause it is cheap. I bought 2 whole butts for like 14 dollars a pop a couple of weeks ago. Brisket is a little more pricy. I'm cooking a brisket friday/saturday it was 4.00 a pound so more than 50 bucks. i don't really pay for bbq much because i prefer to cook my own. It is always better and you don't encounter some schmuck that doesn't pull the membrane off their ribs. That is heresy. You should lose your license to operate a restaurant for that sh*t

I will say this. I have yet to find something called "bad BBQ." If it's properly smoked meat, it's good in my book.
